Sometimes, the simplest meals are the most memorable. In the case of Egypt, it’s the beautiful, fragrant, freshly baked flatbreads that can be found everywhere. They’re used in place of a fork to scoop up delicious Egyptian dips such as hummus, baba-ghanoush (smoky aubergine) and colourful beetroots dips. Egyptians also make the best fava bean soups and stews, and you must try the vibrant green ‘molokhia’, or mallow leaf soup. Made from simple ingredients, it is delicious and nutritious. Khoshari is a finely balanced mixture of rice, lentils, and pasta, served with tomato sauce and garnished with fried onions. It is so important that it is usually eaten in restaurants dedicated entirely to this one dish. Not all Egyptian cuisine is based on vegan ingredients, however. There is a long tradition of grilled meat, especially lamb, meat-filled filo pastry pies and carefully spiced meat stews that simmer for hours in their earthenware pots until they are ready to be shared with friends and family. The Copts keep pigs and sell pork, so, unusually for the Arab World, there are some indigenous pork recipes too.

Of course, Egypt’s most famous and iconic symbols are the pyramids. Greater Cairo now encroaches on the pyramids at Giza, so it’s easy to take a taxi to see them. You can reach them on foot from the taxi rank or take a longer route on horseback, adding drama to the sudden glimpse of the ancient pyramids and the Sphinx. People never tire of Cairo and its intense city vibe, but nevertheless, they are always happy to take a trip southward to Upper Egypt or the Land of the Bullrushes as it was called in ancient times. It offers the opportunity to visit the Valley of the Kings and see modern-day Egypt as you travel through small towns and villages by road or rail or even sailing along the Nile. Egypt is famous for its culture and history but is also marvellous for diving.
